Muffins have been my favorite since childhood.
Whenever I bake a cake, the heady aroma takes me back to the long-lost childhood days of mine. Those tempting straight-out-of-the-oven muffins baked by Maa that would come as sweet surprise to me on returning from school in the afternoons.
Here I bake a Triple Chocolate Mocha Muffins. The temptation of dark chocolate blended with the sin of coffee, a delightful accompaniment to languorous Sunday afternoon teas.

Triple Chocolate Mocha Muffins
Triple Chocolate Mocha Muffins. The temptation of dark chocolate blended with the sin of coffee, a delightful accompaniment to languorous Sunday afternoon teas.
Ingredients
- 1.5 cup plain flour
- 0.5 cup unsweetened cocoa powder
- 1/2 cup dark chocolate chips semisweet
- 1/2 cup 70% dark chocolate roughly chopped
- 70 ml black coffee or espresso
- 1/2 cup butter milk
- 1/3 cup coconut sugar
- 2 eggs
- 1/2 cup oil
- 1/2 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla essence
- 1/4 tsp salt
Instructions
- Preheat the oven to 180C.
- Whisk together the flour, cocoa powder, coconut sugar, baking powder, baking soda and salt into a bowl.
- Add roughly chopped chocolate, chocolate chips and give it a stir.
- In another bowl whisk the eggs, oil, buttermilk, coffee and vanilla essence.
- Add wet ingredients to the dry ingredients and gently fold with a rubber spatula till combined.
- Do not overmix.
- Grease the muffin moulds with oil, ladle the batter to the cups and bake at 180C for 18-20 minutes or till a skewer inserted into the center of a muffin comes out clean.
- Transfer to a wire rack and allow to cool to room temperature.

Can I use normal sugar for coconut sugar, in the same quantity? The muffins looks too good, can’t wait to try.
