It is Valentine’s Day today ?. And S surprises me with a bouquet of beautiful roses. It makes my day.
I sit thinking of the perfect dessert to make to celebrate the day of love. Several all-time favorites cross my mind, Mississippi mud pies, walnut brownies, strawberry shortcakes….
But I finally settle on a rustic one from Gods Own Country. S loves it, its extremely difficult to get it wrong (I do mean it), there’s zero cooking involved and no Kerala meal of ours is ever complete without a hearty portion of elaneer payasam.
And thats what I decide to make ….
All I need is a quick run to the local green coconut seller to get a green coconut that has lots of tender flesh.
Elaneer payasam.. my valetine's day special
Ingredients
- 1 cup thick coconut milk
- 1 cup whole milk
- 1/2 cup tender coconut flesh roughly chopped
- 1/4 cup Coconut water
- 2 tbsp condensed milk
Instructions
- Blend 1/4 cup of coconut flesh in coconut water. Keep aside.
- Mix the coconut milk, whole milk and condensed milk in a bowl.
- Add coconut flesh paste and roughly chopped coconut flesh to the milk-coconut milk mix. Stir well.
- Refrigerate for an hour or two. Serve chilled.
