Lauer Khosha Bhaja (Stir-Fried Bottlegourd Peels)

Lauer khosha bhaja. Stir-fried bottlegourd peels. A whill of kalonji. A throw of wicked green chillies. And loads of love. Divine !!

Ingredients
  

  • 1.5 cups of peels from 2 bottlegourds
  • 1/2 tsp turmeric powder
  • 1/2 tsp kalonji or nigella seeds
  • 2 dry red chilies
  • 2 green chilies slit
  • 1/2 tbsp mustard oil
  • 1/2 tsp sugar
  • salt to taste

Method
 

  1. Julienne the bottlegourd peels.
  2. Heat mustard oil in a pan. When smoking hot, throw in the kalonji and red chillies, allow to splutter.
  3. Add the peels, sprinkle in the salt and turmeric powder, give it a hearty stir. Cook over a medium flame till the peels are tender. Splash a little water if it is getting a wee bit too dry.
  4. Throw in the green chillies, add the sugar. Cover and cook for another 2-3 minutes. Adjust seasonings. Serve hot.
